Part of the preparation was separated and chewed for a period of time to ferment through the action of saliva (native woman at the bottom), then added to the cooking process. The preparation of chicha according to Girolamo Benzoni, (1519-1570) in Historia del Mondo Nuovo, 1572. From "America.
