Pruning is one of the most important tasks of the entire wine year. It takes the longest and accounts for around a third of the total work in the vineyard. Pruning lays the foundations for the quality of the new vintage as early as winter. For more than three months - from mid-December to the end of March - the 300, 000 or so vines are pruned individually by hand each year.
